This recipe is from My Baking Addiction. It's perfect for when you need to bake something quickly and don't have time/want to make cake from scratch.
I always try to use the Pillsbury Moist Supreme Devil's Food cake mix. It's nice and light and this, along with the espresso granules, creates a perfect chocolate base for all kinds of frosting.
Don't feel guilty for using a cake mix as your base! So many bakers do (you'd be surprised).
ENHANCED CHOCOLATE CAKE MIX
INGREDIENTS
Cake
1 box (15.25 ounce) chocolate cake mix
1 (3.4 ounce) box chocolate instant pudding mix
3 large eggs
3/4 cup sour cream
3/4 cup vegetable oil
2 teaspoons vanilla extract
1 tablespoon instant espresso granules dissolved in 1/2 cup warm water
DIRECTIONS
Cupcakes
Preheat oven to 350F.
Line cupcake pan.
Combine all ingredients in stand mixer and beat until combined.
Fill cupcake liners 2/3 full.
Bake 18-22 minutes (until toothpick comes out clean).
Remove from oven, wait about 10 minutes, and transfer cupcakes to wire rack to cool. Frost with your favorite buttercream or ganache.
